Why won’t Portland support a restaurant that is only Prix Fixe?

This is a question I have asked myself as a chef and restaurant owner for years. If Portland can be crowned ‘America’s Foodiest Small Town” then why can it not support a restaurant that offers only a fixed price menu with options?

Valentines Day Dessert Tasting Menu

Bresca will be open Sunday February 14th for a Valentines Dessert Tasting menu. We will be open 5:30pm-9:00pm for dessert only. A three course dessert menu will be served for $16 per person with the option of a dessert wine flight available. There will be our regular dessert wine list and bubbly galore!!! Coffee and tea will also be available. Reservations are being taken over the phone and walk ins are welcome. We will not  have reservations available on Open Table for Sunday February 14th as this is a special occasion and dessert only. Reservations can be made via our number 207.772.1004. 🙂

Banquette seating is here!

This past week we finished the installation of the banquette seating….we love it and hope our guests will as well. More news is that bresca is now on Open Table where reservations can be made online. Just go to opentable.com. In the next few weeks we will have a ‘proper’ website as well, where the link for reservations will be available.

Banquettes coming soon…..

After almost two and half years of what can be described as an ‘intensely intimate’ dining room at bresca, I have decided to have banquettes built and installed in order to create a more comfortable room. We will lose one seat which will put us at 19 seats and we will no longer have ‘bar’ seating. My hope is that service can be more efficient in the new setting and that all our guests will enjoy the change….I plan to have the project completed by the last week of August or first week of September.

12 Seats

12 Seats is a collaboration between Erik and I.  12 Seats is just what the title says.  12 seats, 12 courses, 12 times in one year.  The last Sunday of each month, Erik and I will transform bresca in to an amalgamation of our culinary and hospitality passions.  12 Seats will take over the bresca dining room and kitchen, and he and I will transform ourselves into one chef with the mind of two cooks.

 

All things Evangeline and Bresca circling our minds will be set aside for collaborative menus created organically.  Things we want to cook, the way we want to cook them. The menu will be set.  Unfortunately, vegetarians, pescatarians and vegans will have some difficulty with our menus, as there will be no substitutions except for severe allergies, and these need to be appropriate to each dish.  Again, we are cooking what we want to cook.  We love our meat and foie gras.  We love our dairy, our caviar and our wheat.  As it is a monthly event, a restaurant within a restaurant, the menus we create will be deliberate and therefore we will be unable to make alterations.  We are cooking for those who want to let everything go and just be fed and entertained with great ingredients and wine.

 

There will be one table of 12, one seating only.  The evening will allow us to spread our wings and really COOK.  The relationship between you, the guest, and we, 12 Seats, begins with the first conversation about reserving seats.  And, hopefully the relationship won’t end once you leave after dinner. 

 

The first night 12 Seats will be open will be Sunday October 25th.  The seating is at 6:30 PM.  We ask that you arrive between 6 and 6:15.  Please call 207-838-FOIE(3643) for reservations or just to chat.

Spring 2009

       We are now offering hand selected wine pairings for each dish on the menu. They are available by the glass or bottle and range from obscure Spanish selections to German Riesling vintages no longer available in the state…….many  delicious French and Italian wines are also being paired.
